Summer Broad Bean Salad

A delicious, fresh broad bean salad perfect for a Summers day.


Serves: 2

Prep time: 15 minutes

Cook the podded broad beans in salted simmering water. Drain and put in iced water to cool. Remove from the grey outer pods.
Mix together the chopped parsley, sliced red onion and feta in a separate bowl.
Drain the broad beans and add to the parsley mix. Add the cooled roasted almonds.
Drizzle the mix with olive oil and lemon juice. Season with salt and pepper. Then enjoy!

Ingredients

100gĀ broad beans podded
Handful chopped parsley
1 small red onion sliced
50g feta cheese cubed
50g almonds roasted
Juice of 1 lemon
Salt and pepper
Fresh loaf of bread
