Rainbow Veggie Wrap

A quick, nutrient-rich wrap using hydroponically grown greens. Packed with colour, crunch and flavour – perfect for a healthy school lunch or light meal.

Serves: 2 l Prep time: 10 minutes

Lay the wraps flat and spread a thin layer of hummus or cream cheese.
Arrange lettuce leaves evenly over the base.
Layer the cabbage, carrot, cucumber, bell pepper and basil in colourful stripes.
Season lightly with salt and pepper.
Roll the wraps tightly, slice in half, and serve fresh.

Ingredients

2 large wholegrain wraps
1 cup fresh lettuce leaves
½ cup shredded red cabbage
½ cup grated carrot
½ cup cucumber sticks
½ red bell pepper
Sliced fresh basil leaves
2 tbsp hummus or cream cheese
