Basil Salmon and Chard
A midweek dinner hero, this dish is simple and quick, without compromising on delicious flavour and all important nutrition.
Serves: 4 l Prep time: 10 minutes l Total time: 25 minutes

Ingredients
1kg salmon fillets, organic and sustainably sourced
Zest of 1 large lemon
Juice of half the lemon
2 tbsp of regular or lemon basil, finely chopped
1 clove garlic, chopped
1/2 tsp salt
400g chard
1/4 tsp freshly ground black pepper
1tsp olive oil (or melted butter)
Method
Preheat oven to 190c.
Place salmon fillets on a baking sheet and pat dry with paper towel.
In a small bowl, stir together all remaining ingredients until combined.
Evenly spread mixture over salmon fillets.
Bake for about 15 mins, or until salmon is evenly cooked and top is nicely browned.
Remove from heat and serve with extra slices of lemon.
Meanwhile, wash chard. Add garlic to frying pan with a few glugs of olive oil.
Sautée garlic for a minute or two, then add the chard and lightly sautée until wilted and the colour of the chard is vibrant green.
Serve with freshly ground salt & pepper.
