CORIANDER
Coriander HAS a bright, citrusy freshness. It works well in salsas, curries, salads, and as a finishing garnish on almost any savoury dish.
Member of the carrot family (Apiaceae), like chervil, dill, and parsley.
A staple across Mexican, Indian, Southeast Asian, and Middle Eastern cooking. It's full of vitamin K and antioxidants, and traditionally used to support digestion.

HOW TO STORE YOUR CORIANDER
Storage: Keep fresh in the fridge, standing in a glass of water like fresh flowers with a bag loosely over the top, for up to a week. Change the water every couple of days.
Drying: Not recommended as coriander leaves lose almost all their flavour and aroma when dried (the seeds, by contrast, dry and keep very well, but that's a different product).
Freezing: Chop leaves and freeze in ice cube trays with a little water or olive oil; a good way to preserve flavour for cooked dishes, though it won't work as a fresh garnish once thawed.
