Courgette and Sorrel Soup 

Serves 4


  • 1 onion - chopped

  • 1 garlic clove - chopped 

  • 2 tbsp butter

  • 3 medium courgettes (aprox. 600-700g)

  • 500ml chicken or vegetable stock

  • 50g Sorrel, stems removed

  • Double cream 

  • Micro green (optional)



Step 1 

Heat the butter in a medium sized pan

Step 2 

Add the onion, stir until soft

Step 3

Add the garlic and cook for 1-2 minutes

Step 4

Whilst cooking, slice the courgettes and add them to the onions and garlic.

Step 5 

Add the stock, cover and cook over a medium high heat until the courgettes are just cooked through

Step 6 

Remove from heat and stir in the Sorrel leaves

Step 5 

Use a blender to puree the soup

Step 5 

Add salt and pepper to taste and serve soup with a drizzle of cream and micro greens (optional)
